Almost ready!

The prickly pear fruit are beginning to change color!
It won't be long now, and we can harvest these for canning.  I have gotten pretty good at the prickly pear jelly, but watching these ripen, I will begin to search for some new ways to prepare and save them!

Got any ideas for me?  Recipes?  Anybody want to have a canning party?
